The surname of Ukrainian or Belarusian origin was derived from the nickname Zubok – the pet form of the word zub (English «tooth»). Zubok could have been a nickname for someone with large teeth, or a mocker, a jeerer.

The surname is widespread in Ukraine. In Russia, it is most often found in the Transbaikal and Maritime Territories, the Bryansk Region, Moscow, the Khabarovsk Territory, St. Petersburg, the Moscow suburbs, as well as the Kemerovo and Kirov Regions. Bearers of this name also reside in Belarus.

The surname has been found in manuscripts since the 16th century. Yan Zubok, a zemyanin (a military rank in Poland and the Grand Duchy of Lithuania) of the Belsk Territory of the Podlaska Voivodeship, was registered during the census taken in the Lithuanian Army in 1528. In 1647, the list of Chuhuiv-based citizens subject to salary payment included Private Gunner Zubok. The Cross Swearing Register dated back to 1682 of those who had sworn allegiance to 2 tsars, namely Ivan Alexeyevich and Peter Alexeyevich in the town of Zmyiv there was Private Cossack Zubok. In 1732, the Devitskaya Sotnia of the Nizhin Regiment included Cossacks Mikhailo Zubok and Sakhno Zubok. Ivan Zubok and Isidor Zubok appear on the list of the educated settlers on the account of the state from the Surazh and Mglin Counties, sent by the Kostroma steamer to the South Ussurian Territory in 1884.
